Directions
Gently heat your oven to 375°F and grease a 12-cup muffin tin to keep the oatmeal from sticking. In a large bowl, combine the almond milk, applesauce, chopped apple, raisins, pecans, flax meal, eggs, brown sugar, cinnamon, and nutmeg. Give everything a good stir, then mix in the oats until it’s all well combined. Let the mixture rest for about 5 minutes so the oats can soak up some of the liquid. Use an ice cream scoop or spoon to fill each muffin cup evenly. Pop the tin in the oven and bake for around 20 minutes, or until the tops turn a nice golden brown. Once they’re done, let the oatmeal muffins sit in the tin for a few minutes before moving them to a wire rack to cool completely.
